I am head over heels in love with this breakfast. It’s stupidly easy to make but is so incredibly creamy and delicious, you’d think someone slaved over a hot stove all day. But they didn’t! And you won’t have to either.
All you have to do is soak your oats and chia seeds in orange juice or milk the night before, top it with a few bits and bobs in the morning and that’s it! It really is that simple and it tastes so good!
Overnight Oats with Blueberry Compote
½ cup rolled oats2 teaspoons chia seedsJuice of 1 orange or ½ cup your choice of milk (I use almond milk but would use full cream if I could tolerate it!)1/3 cup blueberries (fresh or frozen, it doesn’t matter)1-2 tablespoons greek yoghurt or coconut yoghurt1 tablespoon pepitas1 tablespoon raisins or sultanasDrizzle of honey, to serve (optional for some but essential for me!)
The night before
Pop your oats, chia seeds and orange juice/milk in a jar, bowl or small container. Give it a stir, cover it with a lid or tin foil and leave it in the fridge overnight.
If you know you’ll be rushed for time, make the blueberry compote the night before as well. Put the blueberries in a small saucepan over low heat, cover with a tiny bit of water (no more than a tablespoon), cover with the lid and leave to thicken for about 10 minutes. Some compote recipes call for sugar, honey or sweetener but I think the blueberries are already sweet enough! Store in a container in the fridge; it’s lovely hot or cold!
In the morning
If you haven’t already made the compote, make that first.
Then, pop your oats in a bowl and scatter the raisins/sultanas on top. Dollop the yoghurt on top of the oats, pour the compote over that and finally, sprinkle with pepitas and a drizzle of honey.
Marvel at how much of a domestic fiend you are and enjoy!
A wee tip: You can easily double the recipe or make a big batch for the week. It lasts really well in the fridge and tastes just as delicious a couple of days after you make it. Wonderful for those busy mornings!
