Mixed Berry Chia Jam

You know when a song comes on and people are all "this is my jam"? Well, they’re not talking about this recipe. But they should be, because it’s delicious!

Most store bought jams are heavenly but are packed with mountains of refined sugar. This one has only a tablespoon of coconut sugar; the rest of the sweetness comes from the beautiful mixed berries.

This jam is super duper easy to make and you can use it in just about anything: baking, spreading on toast or dolloping on porridge. It adds that little bit extra to every sweet treat or breakfast!

Mixed Berry Chia Jam

Makes 1 jar

Ingredients

2 cups mixed berries (I use strawberries, raspberries and blackberries)2 tablespoons chia seeds1 tablespoon coconut sugar

Wash all the berries and cut the strawberries in half, discarding the tops.

Pop all of the berries in a medium sized saucepan with a tiny bit of boiling water. Put the lid on for about 5-10 minutes, until the berries start to soften.

Use a potato masher to mash the berries together, but leave some chunks for a nice consistency.

Pour in the chia seeds and coconut sugar and give it a good stir.

Keep stirring so the jam doesn’t stick to the bottom of the saucepan. Stir the mixture for about 5 minutes, until all water has absorbed and the jam is lovely and thick.

Take the jam off the heat and let it cool. Store in an airtight jar in the fridge for up to 1 week.
