I don’t know about you, but I think I could happily eat a whole cheese platter for dinner every night for the rest of eternity. My lactose intolerance and waistline probably wouldn’t approve, but boy I just know my tastebuds would!
You know the age-old classic “you don’t make friends with salad” from The Simpsons? I feel like you definitely can make friends with salad if you make it delicious, or better still, make it taste just like a cheese platter.
This one is just a real treat! All of the flavours compliment each other perfectly; just like SpongeBob and his square pants, they are meant to be!
You can adjust the amount of each ingredient to your liking, for example: double the quantity of gorgonzola and forget about the other ingredients. Just kidding! But feel free to have a sneaky taste test of the cheese while you’re crumbling it up to put it in the salad: that’s what I do!
Pear, Prosciutto and Gorgonzola Salad with a Honey Balsamic Dressing
Serves 2 as a side
Ingredients
For the salad:
1/3 cup crumbled up gorgonzola5 slices of prosciutto½ a pear, sliced thinly2 cups spinach and rocket
For the dressing:
3 tablespoons cold-pressed extra virgin olive oil1 tablespoon balsamic vinegar1 teaspoon raw honey
Pop the spinach and rocket in a bowl and arrange the prosciutto, pear and gorgonzola on top. Think that’s an easy process? Wait till you make the dressing!
Pour the olive oil, balsamic vinegar and honey in a small jar, pop the lid on and shake it like a polaroid picture.
Pour a wee bit of the dressing on top of the salad, serve and enjoy!
