Apple Crumble Granola

I’ll admit it. I’ve made my apple crumble on a Sunday night and claimed it was because I wanted to treat my family and friends to a delicious dessert, when it was really because I wanted to eat it for breakfast the next morning. I’m not ashamed!

But the other day I thought to myself, wouldn’t it be great if there was a granola that tasted just like apple crumble, was easier to make and a tiny bit more nutritious?

And that was that. The next minute… Well, the next hour (I was watching Netflix and couldn’t just abandon Downton Abbey mid episode) I was in the kitchen whipping out the oats, apples and spices.

The best thing about this granola is how much it actually tastes like apple crumble… The apple, spices, walnuts and oats are just a magical combination; wingardium leviosa it into my mouth, you know what I’m saying?!

The second best thing is how easy it is to make. You just fang a bunch of oats, walnuts, spices, chopped apple,

apple puree, sugar and olive oil in a bowl, stir it, whack it in the oven and you’re good to go!

The third best thing about this granola is that it’s for real a super duper filling and nutritious breakfast.

Oats are filled with a buttload of fibre, walnuts and sunflower seeds are great sources of essential fatty acids, cinnamon is great for regulating blood sugar levels AND it has quinoa in it, which as we all know is basically the epitome of health and nutrition; just ask anyone on instagram!

“Oh, but Louise, you put brown sugar in it.” Yeah I did; a tablespoon for the whole batch. It’s okay, you guys. It won’t kill you! If you really want, you can leave it out. But it tastes SO much better when you include it!

Let’s just think about what’s really important here, pals. This granola tastes like apple crumble and it’s delicious… Just get it in your gob and thank me later!

Apple Crumble Granola

Makes about 2 cups

Ingredients

– 1 1/2 cups oats

– 1/2 cup walnuts, roughly chopped

– 2 tablespoons uncooked quinoa

– 2 tablespoons sunflower seeds

– 2 apples, peeled, cored & chopped into little chunks (or 1 cup dried apple; if you use this instead, be sure to add it to the granola after baking it)

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ginger

– 1 teaspoon allspice

– Small grating of fresh nutmeg (or 1/2 teaspoon ground nutmeg)

– Small pinch of salt

– 1 heaped tablespoon brown sugar

– 1 tablespoon maple syrup (optional but delicious)

– 3/4 cup apple puree

– 1/4 cup extra virgin olive oil

Method

Preheat oven to 200 degrees celcius.

In a large mixing bowl, combine oats, walnuts, quinoa, sunflower seeds, spices and salt. Give it a real good stir!

Add the brown sugar, maple syrup, apple puree, extra virgin olive oil and apple chunks and stir until everything is well coated and lovely and sticky!

Spread out on a large baking tray or dish in an even layer.

Pop in the oven for 35-40 minutes, stirring halfway through to ensure none of it gets burnt.

Once the granola is finished baking, take it out of the oven to cool completely before storing in an airtight container. If you’re using dried apple chunks instead of fresh apple, make sure you add them once the granola is completely cooled.

Serve with yoghurt, milk, on top of porridge or by itself; I eat it by the handful and I regret nothing!

Wee note: the granola might not feel crispy and crunchy when you take it out of the oven, but it will once it’s finished cooling- I pinky promise!

Another wee note: Some people have asked how long this granola keeps for. The honest answer? It’s usually gone within a couple of days in my house, so I’m not too sure! If you use dried apple it should keep for a good few weeks in an airtight container; if you use fresh apple it probably won’t last as long… Be safe, just shovel it down in a couple of days like we do!

One more wee note, I promise: You can easily double the quantities in this recipe to make a bigger batch; if you do, you’ll end up with a huge jar of apple crumble granola, a happy household and an even happier set of tastebuds!
