Coffee & Cacao Granola

Will I ever stop posting granola recipes? You bet your sweet batootie I won’t! And you guys will be super glad as soon as you try this flavour combination.

It’s a big time winner. Chocolate for breakfast? Don’t mind if I do! Mix it with some coffee? NOW WE’RE TALKING.

My love for chocolate is no secret and it is a love that runs deep and true. My love for coffee? That’s a whole other story, and one that I’m going to make you read unless you skip straight to the recipe!

It all started in Year 11, when one of my best friends Larni and I were 16. She told me mochas were the ‘in thing’ and I should totes try one. I totes did. We had them with sugar, too! Sickly sweet and totally enough caffeine to get us through our modern history class… With the addition of fundraiser freddos, of course.

Next, came cappuccinos. YAS QUEEN. I used to have them with two sugars, something I find pretty astounding now. What can I say? I was a sweet tooth!

Then, I was forced to put my coffee addiction on hold when I was diagnosed with GAD. My doctor told me people with anxiety shouldn’t have caffeine, so I should stay away from coffee for a while. "You can always have decaff" she said, trying to comfort me. I was all, "Doc, decaff coffee is like vegan "cheese". WHAT IS THE GOSH DARNED POINT!?"

A couple of years later, I’m back on the coffee train. Choo choo, baby. It feels good. Only sometimes, when I order coffee and it turns out to be a REAL bad coffee, it doesn’t feel so good.

Enter coffee flavoured granola! You’re welcome, me. And you guys, of course!

This, like most other granola, is best served with some fruit, a great big dollop of yogurt or some nice cold milk. Actually, warm milk would definitely work too. It might even help the granola to brew you a cup of coffee! GENIUS, YOU GUYS. GENIUS.

You could even just be totally outrageous and enjoy this granola with a cup of coffee. Go ahead, you guys. Live life! Do you, boo boo!

Coffee & Cacao Granola

Makes 1 big jar


– 3 cups rolled oats

– 1 cup pecans

– 1/2 cup sunflower seeds

– 1/2 cup pepitas

– 2 tablespoons uncooked quinoa*

– 3/4 teaspoon sea salt

– Pinch of cinnamon

– 2 heaped tablespoons raw cacao powder

– 1 tablespoon ground coffee**

– 1/2 cup extra virgin olive oil

– 1/3 cup maple syrup + 1 tablespoon

– 1 teaspoon vanilla extract

* Optional but it adds a real nice crunch!

** I use a mortar and pestle to grind instant coffee but if you have a real coffee grinder then go ahead and get down with your bad self.

1. Preheat oven to 170 degrees celcius and line 2 baking trays with baking paper.

2. In a large bowl, combine oats, pecans, sunflower seeds, pepitas, quinoa, salt, cinnamon, cacao powder and ground coffee.

3. Add olive oil, maple syrup and vanilla extract and stir well until everything is evenly coated and smelling all mocha-like!

4. Spread the granola out evenly onto prepared baking trays and bake in oven for 15-30 minutes. Check on it frequently, as the cacao and coffee make it very easy to burn. You’ll know the granola is ready when it’s smelling real heavenly and no longer looks sticky; it will harden up as it cools.

5. Leave the granola to cool completely before storing in an airtight jar. Enjoy, pals!
